Hearty Vegetable Sauté (Bell Peppers, Cherry Tomatoes, Zucchini)

  • Red and yellow bell peppers 🌶️
  • Cherry tomatoes 🍅
  • Zucchini 🥒

  • Curry powder ✨
  • Mustard 🥄
  • Olive oil 🫒

💡 Preparation:

1️⃣ Prep the bell peppers:

  • Slice the red and yellow bell peppers into thin strips.
  • Sauté them in a hot skillet with a drizzle of olive oil, minced garlic, a pinch of salt, and black pepper until tender.

2️⃣ Season the peppers:

  • Transfer the cooked peppers to a bowl.
  • Add a spoonful of curry powder and a spoonful of mustard, then mix well to coat the peppers in the aromatic spices.

3️⃣ Cook the zucchini:

  • Slice the zucchini into rounds.
  • Sauté them in a pan with a bit of olive oil until they’re lightly golden and tender.

4️⃣ Assemble the dish:

  • Layer the seasoned peppers at the bottom of an oven-safe dish.
  • Add the zucchini slices on top, followed by halved cherry tomatoes.

5️⃣ Bake:

  • Place in a preheated oven at 200°C (390°F) for 10 minutes to let the flavors meld together.
