Hello, hello! Today, let’s head to the Atakora region to discover the delicious traditional dish, Kia Kperou, a stone cake cooked on a hot stone! I discovered this dish in Cobli, and although I’ve forgotten its exact name, I know that among the Bariba, it’s called Kia Kperou. This dish is also enjoyed in the north of Togo, but with red palm oil for extra flavor. 😋🌶
Ingredients:
- Bean flour
- A bit of yam flour (optional)
- A little potash
Preparation:
1️⃣ Prepare the dough:
Mix the flours with water to form a dough that’s not too thick.
2️⃣ Cook on the stone:
Traditionally cooked on a hot stone, but here I used a frying pan for the cooking.
🌟 Variation: You can replace the bean flour with voandzou flour for a unique taste. 😘
