Slowly simmered and then lightly browned in a pan with garlic, onions, and aromatic herbs, these beans are infused with rich, fragrant flavors. This dish can be served on its own, as a side, or paired with vegetables or meat for a complete meal. A true delight that’s quick and healthy!
Ingredients:
- 2 cans of white beans 🥫
- 4 large tomatoes 🍅
- 1 head of garlic 🧄
- 1 small sprig of djija 🌱
- 1 onion 🧅
- 1/4 leek 🌾
- Meat (optional) 🍖
- Oil 🛢
- Salt / Bouillon cube 🧂
- 2 handfuls of mixed vegetables (carrots, green beans, etc.) 🥕 (optional but adds color and texture)
Preparation:
1️⃣ Prepare the beans:
Soak the white beans beforehand, ideally for 2 hours.
Cook until tender, drain, and set aside.
2️⃣ Cook the meat and mixed vegetables:
Cook the meat, cut it into cubes, and set aside.
Steam the mixed vegetables and set aside.
3️⃣ Prepare the sauce:
Mash the tomatoes 🍅, garlic 🧄, djija 🌿, leek 🌾, and half of the onion 🧅.
Heat some oil 🛢 in a pot, add the meat, and brown it.
Add the mashed mixture and let it cook for about 20 minutes.
4️⃣ Season and assemble:
Add the remaining chopped onion, and season with salt and bouillon cube 🧂.
Gently fold in the white beans and mixed vegetables 🥕.
Let everything simmer for 10 to 15 minutes.
Serving suggestion:
Serve with rice 🍚, attiéké 🌾, or bread 🥖 according to your preference.
