🥔 Potatoes: quantity as needed, peeled and cut into chunks
🍗 Chicken pieces: about 500g
🧅 Onions: 2, finely chopped
🍅 Tomatoes: 3, diced
🌶️ Bell peppers: 1 green, 1 red, and 1 yellow, all diced
🧂 Seasoning: salt, optional bouillon cube
🌿 Spices: a blend of oriental spices (or your favorite mix)

Season the chicken:
Season the chicken pieces with the oriental spice mix, salt, and optional crumbled bouillon cube.
Cook the chicken:
Heat some oil in a large pot or Dutch oven.
Fry the chicken pieces until golden brown on all sides.
Remove them and set them aside.
Prepare the sauce:
In the same pot, add the chopped onions and sauté until they become translucent.
Add the diced tomatoes and a teaspoon of the spice mix. Cook for a few minutes until the tomatoes soften.
Add the potatoes:
Return the chicken pieces to the pot.
Add the potato chunks.
Pour in enough water to cover the ingredients.
Season with salt and, if desired, another bouillon cube.
Bring to a boil, then reduce the heat and simmer for about 20 minutes.
Add the bell peppers:
Stir in the diced bell peppers.
Cover and cook on low heat for another 30 minutes, or until the potatoes are tender and the sauce has thickened.
Taste and adjust seasoning as needed.
Serving:
Serve hot, with crispy bread or rice, depending on your preference.
